Bafun Uni, Yellow Seaurchin

Bafun Uni, Yellow Sea urchin  馬糞ウニ or Short spike Seaurchin is the most commonly seen and used Sea Urchin in the culinary world. Bafun Uni Sea urchin is used throughout the world in Michelin starred restaurants and private dinners. Bafun Uni is commonly found in the Northern waters of Japan, near Hokkaido and further up north.

Bafun Uni Sea urchin is smaller in size and has a brighter yellow sun like color or even orange egg yolk color. Bafun Uni has a clean and sweet taste it has a light seafood umami taste that lingers gently on the palate. Bafun Uni is also smoother in texture and less creamier as compared to its brother the Murasaki Uni, purple Sea urchin. 

Bafun Uni is used in all kinds of dishes, from Pastas to Sushi, Rissotos to Clay pot Rice. It is also extremely poplar eaten with plain seaweed and Soy Sauce!
