Miyazaki, the third largest livestock producing prefecture after Hokkaido and Kagoshima, was originally a major producer of calves, taking advantage of its vast and fertile land. As a result, producers of branded beef from all over the country, including Matsusaka beef, purchase Miyazaki beef as their base cattle. These high-quality cattle, which have been passed down since ancient times, are fattened in Miyazaki Prefecture and finished into high-quality meat, which is what we call Miyazaki beef.
Miyazaki beef is characterised by its excellent quality and marbling. The lean meat is firm, smooth to the touch and finely marbled, but the juicy, soft fat that comes from the marbling has a low melting point and melts instantly in your mouth.
The large muscle on the back of a cow is called loin, and the meat from the waist area of the loin is called loin. It has a strong flavor and aroma that is unique to beef, and the higher the quality of the sirloin, the finer the marbling and the finer the texture of the meat fibers. It can be eaten as sukiyaki, shabu-shabu, or yakiniku, but its potential is best realized as a thick steak.
