Steps to Prepare your Kazunoko

1. Desalting (Remove Salt)

  • Kazunoko is often sold salted, so first soak it in a bowl of cold water for about 6–12 hours to remove excess salt.

  • Change the water every 2–3 hours to gradually and gently reduce the saltiness.

  • Taste a small piece to check — it should still have some saltiness but not be overwhelmingly salty.

2. Peeling the Membrane (Optional, but Traditional)

  • Carefully peel off the thin, transparent membrane around the kazunoko if it’s present.

  • You can do this gently by soaking the roe briefly in lukewarm water (not hot!) to loosen the membrane, then carefully rubbing it off with your fingers.

3. Marinating (Optional for More Flavor)

  • For more flavor, marinate the desalinated kazunoko in a seasoned sauce.

  • A common marinade includes:

    • Dashi (Japanese soup stock)

    • Soy sauce

    • Mirin (sweet rice wine)

    • Sake

    • A little sugar

  • Let it marinate for a few hours or preferably overnight in the refrigerator for best flavor absorption.

4. Serving

  • Serve kazunoko chilled as part of an appetizer, a side dish, or traditional osechi ryori (New Year’s celebration foods).

  • Garnish options: sprinkle with katsuobushi (bonito flakes), yuzu zest, or serve with a touch of wasabi for extra brightness.
