Western Australian Marron

Native to the freshwater rivers and streams of South West Western Australia, marron are among the largest freshwater crayfish in the world. For generations, they have been one of Australia's most quietly coveted ingredients.

They grow slowly, and every marron carries the character of its source. The flesh is delicately firm, the flavour clean and naturally sweet, with a finish of subtle richness.

Beyond lobster.

Where lobster speaks of the sea, marron speaks of fresh water. Its flavour is delicate, its finish less briny, and its flesh finely textured with a gentle, yielding firmness. A quieter luxury, made to be savoured.

On the palate

  • Flavour: Clean and naturally sweet.
  • Texture: Succulent and finely grained, with a soft, buttery finish.
  • Versatility: Equally at home in French and Japanese kitchens, and anywhere in between.
  • Provenance: A distinctive taste of South West Western Australia.

Three years. Not one shortcut.

Slow grown

Marron can't be hurried. Each one takes around three years to reach maturity in still, carefully tended water. At Bangadang, they are treated as a premium agricultural product rather than a commodity, with care for their welfare and eating quality.

From water to plate

  • Raised slowly in restored farm dams, where clean water and healthy habitat come first.
  • Harvested by hand, gently graded, and processed with minimal stress.
  • Snap-frozen at peak to hold their sweetness, texture and character intact.
  • Fully traceable from the dam to your table.

Healthy land creates exceptional food.

Guided by regenerative and permaculture principles, the farm's commitment is simple: to work with nature, and to leave the land healthier than it was found.
