Saga wagyu is considered one of the top 5 wagyu breeds in Japan and the world. Its marbling and meat are extremely high quality and would easily be differentiated od put side by side. Its meat is extremely rich yet light, fatty yet beefy at the same time. Saga wagyu is used in many high end Japanese restaurants and is often ranked amongst the top wagyu brands in the world. 
Our Saga A5 Wagyu comes from the famed wagyu ranches of Kyushu, the ranch owners take pride in raising their cattle and provide them with high quality grains, wheat, rice and fresh water from the mountains. Saga prefecture is well known for its lush greenery and high quality ingredients, the nutrients of the land is given to each and every Saga wagyu resulting in one of the highest grades of wagyu beef in the world! 

Ribeye is usually the most used part when it comes to Japanese Shabushabu, Sukiyaki and hot pots, some people also love it for BBQ and Grill. The meat has a fat which runs through the entire steak giving you an even fat to meat ratio. The fat in the middle of the Ribeye is extremely tasty and helps to give more flavor to the whole piece of steak. 


A5 Wagyu is fattier and has more fat to meat ratio than A4 wagyu, this means that it will has a stronger melt in your mouth feel and a higher wagyu beef fat flavor profile. For those who LOVE fat like we do, this is a must!

To Defrost / To Store

    1. Leave in the fridge for 1-2 hours 
    2. Leave under running water for 30min
    3. Do Not re-freeze after it has thawed and defrosted.
    4. Once defrosted, keep refrigerated and consume within 3 days.

「和牛」と聞くと、日本古来の在来種と思われがちですが、実際は異なります。明治時代に食肉の需要拡大に伴って、日本古来の在来種をもとに、外国の品種を交配し品種改良を行って作られたのが和牛なのです。和牛には「黒毛和種」、「褐毛和種」、「日本短角種」、「無角和種」の4種があり、これら4種間の交雑種も和牛と呼ばれます。

 牛の背中の大きな筋肉をロインと呼び、ロインの中でも腰のあたりの肉のことをさします。牛肉特有の味の濃さや香りがしっかりとあり、上質なサーロインほどサシは細かく入り、肉繊維のキメも細かいのが特徴です。すき焼き、しゃぶしゃぶ、焼肉でも食べられるが、厚切りのステーキがそのポテンシャルを最も発揮します。

佐賀和牛を美味しくいただくには 

  1. お肉を焼く時は常温に戻しておきましょう。
  2. 私たちの取り扱っている佐賀和牛はしっかりサシの入った非常に状態のよい肉なので、お塩は焼く直前にふることで十分水分と旨みが増します。
  3. 強火で旨みと肉汁を閉じ込めます。
  4. 焼き具合は焼いている面の側面をチェックしましょう。
  5. 余分な脂はキッチンペーパーで取り除きましょう。
