3 Quick and Easy Sea Urchin Recipes for All Ages!

About Sea Urchin or Japanese Uni

Believe it or not, there are a million ways to enjoy uni (Japanese Sea Urchin) in other recipes than sushi or sashimi. Whether you are in team Bafun or Murasaki Uni, discover 3 simple recipes that you can prepare at home in 20 minutes or less. These recipes are kid friendly and highly nutritious. 

But first, let’s learn what Uni or sea urchin is. Uni (雲丹) [pronounced ‘oo-nee’] is the Japanese name for the edible parts of sea urchin. It comes in various colors, from pale yellow to vivid orange, and tastes like a salty and creamy umami bomb. In Japan, it’s eaten as gunkan maki (“battleship roll”), sashimi, or topped over seafood dishes. It’s an acquired taste, but its laborious harvest methods and global demand has reflected its high price point. Some connoisseurs call uni an aphrodisiac. Sea Urchin and Ikura Crackers (Recipe)

Prep and cook time: 5 minutes   

Our Uni Ikura Cracker is a healthy snack that consists of just 4 ingredients and can be prepared within 5 minutes. This recipe was developed by food blogger and sushi enthusiast, Tessa, exclusively for Shiki.

Ingredients:

  1. Japanese Rice Crackers (preferably, sea-urchin flavored)
  2. Masu Ikura (Hokkaido Trout Roe)
  3. Murasaki Narabi Uni 250g 

How to prepare:

  1. Unpackage rice cracker and assemble on a plate 
  2. Add 1 piece of Uni on each cracker and top with ikura 
  3. Optional: add nori (sushi-grade seaweed) for texture and wasabi for taste

Sea Urchin and Scrambled Eggs on Toast Recipe

Prep and cook time: 10 minutes   

Ingredients:

  1. unsalted butter, divided
  2. 6 eggs 
  3. 2 slices of brioche or regular toast 
  4. Murasaki or Bafun Uni (125g)
  5. Chopped Chives, to garnish 
  6. Salt and pepper, for taste 

How to prepare:

  1. In a medium sized non-stick pan, add 1 to 2 tablespoons of butter and melt over low to medium heat
  2. Add eggs and remaining butter to the pan and stir vigorously with a spatula. Make sure to scrape all edges of the pan
  3. Continue stirring, taking the pan on and off the heat until desired consistency. Season with salt and pepper and remove from the pan.
  4. Toast both sides of brioche. Place scrambled eggs on brioche slices and top with pieces of sea urchin. Garnish with chives and serve.

Uni Kaisen Don Recipe

Prep and cook time: 20 minutes   

Kaisen-don is a type of donburi, or Japanese rice bowl. Kaisen means “seafood” in Japanese, and don is short for donburi. This super easy seafood rice bowl is a great way to enjoy seafood without having to master perfect sashimi skills. The recipe below is inspired masterclass 

Ingredients:

  1. 1 cup freshly steamed sushi white rice
  2. Salmon Sashimi (thinly sliced raw sashimi-grade salmon)
  3. Botan Ebi (Japanese button shrimp)
  4. Hokkaido Muki Hotate Sashimi (raw sashimi-grade Japanese Scallops)
  5. Murasaki / Bafun Uni (Japanese Sea Urchin)
  6. Masu Ikura (Hokkaido Trout Roe)
  7. Soy sauce, to serve
  8. Wasabi, to serve 
  9. Optional: ¼ small Japanese or Persian cucumber, thinly sliced on the diagonal
  10. Optional: ¼ cup radish sprouts
  11. Optional: 1 scallion, thinly sliced on the diagonal
  12. Optional: Toasted white sesame seeds, for garnish
  13. Optional: 2 shiso leaves, for garnish

How to prepare:

  1. Prepare steamed Japanese Sushi rice in the bottom of a serving bowl 
  2. Arrange sashimi pieces on top of shiso leaves, then place on top of rice
  3. Place garnish neatly – cucumber radish, scallion, white sesame seeds
  4. Serve with soy sauce and wasabi to taste
