Auction grade Red Japanese bafun uni is the most used uni in the world. Each box is carefully selected by our purveyors and bid on by our auctioneers the morning they are brought into the famed Tokyo Tsukiji market in Japan. Red Narabi Uni comes from the Japanese waters Off the coasts of Hokkaido and has a unique creamy and briney taste, the uni melts in your mouth leaving a sweet and light aftertaste.

Every morning, our purveyors carefully sift through the boxes of uni available to select and choose the Uni to our exact specification and quality.

What is the difference between Yellow and Red Bafun Uni Sea urchins? 

Yellow and red Uni, sea urchins are almost the same. The main difference according to our head chefs is that one is male and the other female! Taste wise more they are more or less the same, the yellow sometimes being a bit more sweeter while the red a bit more rich in its briny flavour.
