After the fresh uni is canned, it is then steamed. This process allows the aroma and umami of the uni to be condensed within the can.
The sea urchin feeds on rich kombu in Sanriku, which is counted as one of the world’s three largest fishing grounds, hence the taste is sweet and luscious.
Kohachiya is a small family run company in Iwate that distributes fresh coastal produce locally. They own part of the suburban coastline along Iwate and harvest uni, abalones, scallops and seaweed. We found this company along our travels and decided it was a must to bring their family speciality products to Singapore, products that have never left Japan!
