Sohomare Kimoto Junmai Ginjo
Sohomare Kimoto Junmai Ginjo is the top range of Kimoto sakes produced by the world renowned sake brewer Sohomare. the Kono family who has been producing sake since the 1870s are a well known brand name in the Tochigi regoin of Japan. They pride themselves in creating small batch premium sakes, traditional, artisanal and cultural.
Sohomare Kimoto Junmai Ginjo is made of only the premium A area (Yokawa and Tojo regions of Hyogo Prefecture) “Yamada Nishiki” rice, and hand-brewed the old Kimoto way.
Sohomare’s newest family-owner Mr Jun Kono san leads the way in ensuring his families hand crafted sake is the best quality in the region. This Junmai Ginjo is aged intensively and thus has vigor and finesse.

This junmai ginjo is aged for a few years, and brewed with three kinds of yeasts and tank blended. Earthy, gamey and great acidity balance out the sake.
