Our Frozen Sashimi Grade Hokkaido scallops the finest Japan has to offer. They are harvested off the seas of Hokkaido, where the water is freezing cold and rich in nutrients. Each scallop is then individually shucked, washed clean, IQF (Individually quick frozen) and packed.
Each piece is big and succulent with minimal to no water loss after defrosting, you can put them on a hot pan with butter, sear them on the grill, cook them in paellas or pasta or eat them raw immediately after defrosting! These scallops are extremely easy to eat, as they are all IQF (Individually quick frozen) you can eat them as an when you have the craving for them!

To Defrost / To Store

- Leave in the fridge for 24 hours OR
- Leave under running water for 30 minutes
- Do Not re-freeze after it has thawed and defrosted.
- Once defrosted, keep refrigerated and consumed within 5 days.

Scallops grown off the coast of Notsuke, Hokkaido are delicious and surprisingly large. In order to keep the freshness of the scallops, we take out the scallops from the live scallops just landed in the production area, take out only the scallops, and quickly freeze them. You can enjoy it not only as sashimi, but also in various dishes such as marinade and butter grill.
Defrosting method:
Transfer frozen scallops to the refrigerator and slowly defrost over half a day. If you defrost it slowly, the umami ingredients will not flow out and you will be able to enjoy it more deliciously. If you are in a hurry to defrost, put it in a plastic bag and put it under running water with the mouth tightly closed, or immerse it directly in salt water. We do not recommend thawing the scallops in the microwave, as this will greatly reduce the quality of the scallops. Also, be careful not to soak it in fresh water, as it will become watery.
Chefs Notes:
You can enjoy different tastes of scallops depending on how they are cut. For those who want to enjoy a plump texture, it is recommended to cut it vertically along the fibers of the adductor muscle. On the contrary, if you cut the adductor muscle horizontally to cut the fiber, you can enjoy it with a soft and thick texture.
